PhD Thesis: White wines continuous protein stabilization: industrial viability

 

Abstract: One of the major factors which influence white wine quality is its protein stability, since a final product with lack of precipitated is desired. In the winemaking the protein stabilization is done by the addition of bentonite and diatomaceous earth, which allows the precipitation of the unstable proteins. These discontinuous processes have a low selectivity and high environmental impact. The main goal of this work is to study a industrial application of white wine protein stabilization using an adsorption process in continuous by using packed column with zirconium oxide.  Moreover, it is applied a hybrid process integrated by column adsorption process and crossflow microfiltration in order to reduce unstable proteins from wine and to improve the permeate flux during the wine microfiltration. On the other hand, also are studied the properties of the adsorbent material by BET, FTIR, ESEM, x-ray diffraction and zeta-potential techniques. The effect of protein and polyphenols content on the permeate flux decline is studied specifically by HPLC, determining the protein molecular ranges causing of the wine instability and fouling phenomena.
